Reason for celebration

Finally bottled the Cascade Draught I started fermenting back in August. It was quite a dark amber in colour but the flavour was hard to describe. Once it is carbonated and rested another month or so we will see what it’s true character is.

I hereby declare you to be: Honey Longbrew

    Can you taste the honey at all? I imagine most of the sweetness would have gone by now… Did you prime your bottles with more honey, or did you use glucose as per normal?

    I just used regular white sugar (sucrose) for the bottle fermentation. In retrospect I could have used honey, if I had some. I used the last little bit I had to make a Coopers Pale Ale starter as per Greg Lehey’s instructions for my next batch.
